Prep – 15 minutes
Chill – 2-3 hours

4-6 glasses
-
170g (6 oz) dark chocolate (60–70%), chopped
-
¾ cup (180ml) heavy cream, chilled
-
¼ cup (60ml) milk (dairy or plant-based)
-
1 tbsp (15g) sugar (optional, depending on chocolate sweetness)
-
1 tsp vanilla extract
-
Pinch of salt
-
Melt the chocolate: Combine chopped chocolate and milk in a heatproof bowl. Melt gently over a double boiler or in short microwave bursts. Stir until smooth and let cool to room temperature.
-
Whip cream: In a separate bowl, beat the cream, sugar (if using), vanilla, and salt to medium peaks.
-
Combine: Fold one-third of the whipped cream into the chocolate to lighten the mixture. Then gently fold in the remaining whipped cream until smooth.
-
Chill & serve: Divide into glasses or ramekins and chill for 2–3 hours. Garnish with cocoa powder, berries, or curls of chocolate.
