Chocolate Mousse

Ingredients
  • 170g (6 oz) dark chocolate (60–70%), chopped

  • ¾ cup (180ml) heavy cream, chilled

  • ¼ cup (60ml) milk (dairy or plant-based)

  • 1 tbsp (15g) sugar (optional, depending on chocolate sweetness)

  • 1 tsp vanilla extract

  • Pinch of salt

Instructions
  • Melt the chocolate: Combine chopped chocolate and milk in a heatproof bowl. Melt gently over a double boiler or in short microwave bursts. Stir until smooth and let cool to room temperature.

  • Whip cream: In a separate bowl, beat the cream, sugar (if using), vanilla, and salt to medium peaks.

  • Combine: Fold one-third of the whipped cream into the chocolate to lighten the mixture. Then gently fold in the remaining whipped cream until smooth.

  • Chill & serve: Divide into glasses or ramekins and chill for 2–3 hours. Garnish with cocoa powder, berries, or curls of chocolate.
