Madeleines
Madeleines are delicate, shell-shaped sponge cakes originating from France, known for their tender crumb and lightly crisp edges. These buttery little treats are flavored with hints of vanilla and lemon, perfect for pairing with tea or coffee. Though they look elegant, they’re surprisingly easy to make — ideal for brunch, gifting, or an everyday indulgence.

20-24 madeleines
- 100g butter (melted & cooled)
- 120g sugar
- 2 eggs
- 1 tsp vanilla or lemon zest
- 120g all-purpose flour
- ½ tsp baking powder
- Pinch of salt
- Beat eggs and sugar until light. Add vanilla/zest. Fold in sifted flour, baking powder, salt.
- Mix in melted butter. Chill batter 1 hour.
- Preheat oven to 190°C (375°F). Grease madeleine pan.
- Fill molds ¾ full. Bake 10–12 min until golden and domed.
Tips & Tricks
Chill the batter for at least 1 hour to help develop the signature hump.
Grease and flour the madeleine pan thoroughly to ensure easy release.
Don’t overmix — treat the batter gently to keep the texture light and airy.
Use fresh lemon zest or almond extract for a variation in flavor.
Best enjoyed the day they’re made, but they can be stored in an airtight container for 2–3 days.
Serve warm or room temperature, dusted with powdered sugar.
