Madeleines

Madeleines are delicate, shell-shaped sponge cakes originating from France, known for their tender crumb and lightly crisp edges. These buttery little treats are flavored with hints of vanilla and lemon, perfect for pairing with tea or coffee. Though they look elegant, they’re surprisingly easy to make — ideal for brunch, gifting, or an everyday indulgence.

Tips & Tricks

  • Chill the batter for at least 1 hour to help develop the signature hump.

  • Grease and flour the madeleine pan thoroughly to ensure easy release.

  • Don’t overmix — treat the batter gently to keep the texture light and airy.

  • Use fresh lemon zest or almond extract for a variation in flavor.

  • Best enjoyed the day they’re made, but they can be stored in an airtight container for 2–3 days.

  • Serve warm or room temperature, dusted with powdered sugar.

  • Pair with tea, coffee, or hot chocolate — a timeless afternoon snack.

  • Excellent addition to a pastry tray or brunch spread.
