For the Dough:
- 1¼ cups (155g) all-purpose flour
- 1 tbsp granulated sugar
- ¼ tsp salt
- ½ cup (115g) cold unsalted butter, cubed
- 3–4 tbsp (45–60ml) ice water
For the Filling:
- 2½ cups (375g) fresh or frozen cherries, pitted
- ¼ cup (50g) granulated sugar
- 1 tbsp cornstarch
- ½ tsp almond extract
For Assembly:
- 1 egg, beaten (for egg wash)
- 1 tbsp sliced almonds
- 1 tsp coarse sugar (optional)
- Make the dough: combine flour, sugar, and salt. Cut in butter until crumbly. Add ice water just until dough forms. Chill 30 min.
- Preheat oven to 375°F (190°C).
- Mix cherries, sugar, cornstarch, and almond extract.
- Roll dough into a 12-inch (30 cm) circle on parchment. Spoon filling in center, leaving a 2-inch (5 cm) border. Fold edges over filling.
- Brush with egg wash, sprinkle almonds and coarse sugar. Bake 35 min until golden and bubbly. Cool slightly before serving.
