4-6 servings

Ingredients
  • 4 cups (600g) ripe peaches, peeled, pitted, and chopped (fresh or thawed frozen)
  • ¾ cup (150g) granulated sugar
  • ½ cup (120ml) water
  • 1 tbsp (15ml) lemon juice
  • Pinch of salt
Instructions
  • In a small saucepan, heat sugar, water, and salt over medium heat until sugar is fully dissolved. Let the syrup cool completely.
  • In a blender or food processor, purée the peaches, lemon juice, and cooled syrup until smooth.
  • Strain through a fine mesh sieve to remove any pulp (optional, for smoother texture).
  • Pour mixture into a shallow freezer-safe container.
  • Freeze for 45 minutes, then stir vigorously with a fork to break up ice crystals.
  • Repeat every 30–45 minutes for about 4 hours, until smooth and scoopable.
  • Cover and freeze until ready to serve.

Tips & Tricks

  • Use fully ripe peaches for the best sweetness and flavor — peel if the skins are bitter.

  • Add a tablespoon of lemon juice to brighten the flavor and preserve the sorbet’s color.

  • A splash of vodka or white rum will reduce iciness and improve scoopability (optional).

  • Let sit at room temperature for 5–10 minutes before serving for a perfect texture.

  • Blend until very smooth, then strain for an ultra-silky finish, if preferred.

  • Serve in chilled bowls or glasses with thin peach slices or a mint sprig for a pretty touch.

  • Pair with a shortbread cookie, spoon over grilled peaches, or layer into a fruit parfait.

  • Excellent as a light dessert or palate cleanser between savory courses.
