Blueberry Jam

Ingredients
  • 4 cups (600g) fresh or frozen blueberries
  • 1½ cups (300g) granulated sugar
  • 2 tbsp (30ml) lemon juice
  • 1 tsp lemon zest
  • 1 tsp vanilla extract (optional)
Instructions
  • Place blueberries, sugar, lemon juice, and zest in a medium saucepan over medium heat.
  • Stir occasionally and bring to a gentle boil.
  • Simmer for 25–30 minutes, stirring often, until thickened. The jam should coat the back of a spoon.
  • For a smoother texture, mash the berries lightly with a fork or potato masher.
  • Stir in vanilla (if using), then remove from heat.
  • Let cool slightly, then pour into clean glass jars. Seal and refrigerate once cooled.
  • Keeps in the fridge up to 3 weeks, or freeze for longer storage.
