Cherry Jam

This homemade Cherry Jam is rich, fruity, and naturally vibrant — perfect for showcasing summer’s best cherries. Ingredients
  • 4 cups (600g) fresh pitted sweet cherries
  • 1¾ cups (350g) granulated sugar
  • 2 tbsp (30ml) lemon juice (fresh)
  • 1 tsp lemon zest
  • ½ tsp vanilla extract (optional, for depth)
Instructions
  • Place the cherries in a food processor and pulse until roughly chopped.
  • In a heavy-bottomed saucepan, combine cherries, sugar, lemon juice, and lemon zest.
  • Bring to a boil over medium-high heat, stirring frequently. Once boiling, reduce to medium and simmer uncovered.
  • Continue simmering for 30–35 minutes, stirring often, until the jam thickens. To check for doneness, place a small spoonful on a cold plate — if it wrinkles when pushed, it’s ready.
  • Remove from heat. Stir in vanilla extract if using.
  • Let cool slightly, then transfer into sterilized jars.
  • Store in the refrigerator for up to 3 weeks, or process in a water bath for long-term storage.
