Ingredients

Cake:

  • 2 cups (250g) all-purpose flour
  • 2 tsp baking soda
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • 1 cup (200g) granulated sugar
  • 1 cup (220g) brown sugar
  • 1 cup (240ml) vegetable oil
  • 4 large eggs
  • 3 cups (300g) grated carrots
  • 1 cup (100g) chopped walnuts or pecans

Frosting:

  • 8 oz (225g) cream cheese, softened
  • ½ cup (115g) unsalted butter
  • 3 cups (360g) powdered sugar
  • 1 tsp vanilla extract
Instructions
  • Preheat oven to 350°F (175°C).
  • Grease two 9-inch pans.
  • Mix dry ingredients. In another bowl, mix sugars and oil. Add eggs one at a time.
  • Fold dry into wet. Stir in carrots and nuts.
  • Divide batter between pans and bake 35–40 minutes.
  • For frosting, beat butter and cream cheese, add powdered sugar and vanilla. Frost cooled cakes.
