Ingredients

For the Dough:

  • 1¼ cups (155g) all-purpose flour
  • 1 tbsp granulated sugar
  • ¼ tsp salt
  • ½ cup (115g) cold unsalted butter, cubed
  • 3–4 tbsp (45–60ml) ice water

For the Filling:

  • 2½ cups (375g) fresh or frozen cherries, pitted
  • ¼ cup (50g) granulated sugar
  • 1 tbsp cornstarch
  • ½ tsp almond extract

For Assembly:

  • 1 egg, beaten (for egg wash)
  • 1 tbsp sliced almonds
  • 1 tsp coarse sugar (optional)
Instructions
  • Make the dough: combine flour, sugar, and salt. Cut in butter until crumbly. Add ice water just until dough forms. Chill 30 min.
  • Preheat oven to 375°F (190°C).
  • Mix cherries, sugar, cornstarch, and almond extract.
  • Roll dough into a 12-inch (30 cm) circle on parchment. Spoon filling in center, leaving a 2-inch (5 cm) border. Fold edges over filling.
  • Brush with egg wash, sprinkle almonds and coarse sugar. Bake 35 min until golden and bubbly. Cool slightly before serving.
