Prep – 15 minutes
Freezing – 4 hours

4-6 servings
Ingredients
- 3 cups (450g) fresh or frozen pitted cherries
- ¾ cup (150g) granulated sugar
- ½ cup (120ml) water
- 1 tbsp (15ml) lemon juice
- 1 tsp vanilla extract (optional, for depth)
- Pinch of salt
Instructions
- In a small saucepan, combine sugar, water, and salt. Heat over medium heat, stirring until the sugar fully dissolves. Let cool completely.
- In a blender or food processor, purée the cherries, lemon juice, vanilla (if using), and cooled syrup until very smooth.
- Strain through a fine-mesh sieve if you prefer a smoother texture.
- Pour the mixture into a shallow freezer-safe container.
- Freeze for 45 minutes, then stir well with a fork to break up ice crystals.
- Repeat stirring every 30–45 minutes for 4–5 hours, until smooth and scoopable.
- Cover and freeze until ready to serve. Garnish with fresh cherries or mint if desired.
Tips & Tricks
- Use dark, sweet cherries for the most vibrant color and flavor. If using frozen, thaw and drain first.
- A tablespoon of lemon or lime juice helps brighten the flavor and balance sweetness.
- Blend until completely smooth, then strain for a silkier texture if desired.
- For easier scooping, let it sit at room temperature for 5–10 minutes before serving.
- Add a tablespoon of vodka or cherry liqueur to help reduce iciness (optional but effective).
- Serve in small bowls or glasses with a few fresh cherries or a sprig of mint on top.
- Pair with dark chocolate shavings or a spoonful of coconut whipped cream for added richness.
- Wonderful as a light dessert, palate cleanser, or an afternoon refresher on hot days.
- Layer it with other fruit sorbets or vegan ice creams for a visually striking summer dessert.
