Cherry Sorbet

Ingredients
  • 3 cups (450g) fresh or frozen pitted cherries
  • ¾ cup (150g) granulated sugar
  • ½ cup (120ml) water
  • 1 tbsp (15ml) lemon juice
  • 1 tsp vanilla extract (optional, for depth)
  • Pinch of salt
Instructions
  • In a small saucepan, combine sugar, water, and salt. Heat over medium heat, stirring until the sugar fully dissolves. Let cool completely.
  • In a blender or food processor, purée the cherries, lemon juice, vanilla (if using), and cooled syrup until very smooth.
  • Strain through a fine-mesh sieve if you prefer a smoother texture.
  • Pour the mixture into a shallow freezer-safe container.
  • Freeze for 45 minutes, then stir well with a fork to break up ice crystals.
  • Repeat stirring every 30–45 minutes for 4–5 hours, until smooth and scoopable.
  • Cover and freeze until ready to serve. Garnish with fresh cherries or mint if desired.
