24 macarons

Ingredients
  • 1 ¾ cups (200g) powdered sugar
  • 1 cup (100g) almond flour (superfine)
  • 3 large egg whites, room temp
  • ¼ cup (50g) granulated sugar
  • 1 tsp vanilla extract
  • Food coloring (optional)

Filling:

    • ½ cup (115g) unsalted butter, softened
    • 1 ½ cups (180g) powdered sugar
    • 1 tsp vanilla extract
    • 2 tbsp heavy cream
Instructions
  • Sift powdered sugar and almond flour together.
  • Beat egg whites until foamy; gradually add granulated sugar and beat to stiff peaks.
  • Fold dry ingredients into the egg whites in 3 additions (batter should slowly flow like lava).
  • Pipe circles onto parchment-lined baking sheets.
  • Tap tray to release air bubbles. Let sit 30-40 minutes until a skin forms.
  • Bake at 300°F (150°C) for 12–15 minutes.
  • Cool and fill with buttercream.

Tips & Tricks

  • Use a kitchen scale for precise measurements — accuracy is key.

  • Always sift the almond flour and powdered sugar thoroughly to ensure smooth shells.

  • Let piped shells rest until they form a “skin” — this prevents cracking in the oven.

  • Bake one tray at a time for even results. Let macarons mature in the fridge 24 hours for best flavor and texture.

  • Fill with complementary flavors like raspberry jam, chocolate ganache, pistachio cream, or lemon curd.
  • Serve at room temperature for the ideal texture — crisp on the outside, tender inside.
  • Pair with espresso, earl grey tea, or sparkling wine for an elegant treat.
