Ingredients

For the crust:

  • 1 ¾ cups (175g) graham cracker crumbs
  • ¼ cup (50g) granulated sugar
  • ½ cup (1 stick / 115g) unsalted butter, melted

For the filling:

  • 32 oz (900g) cream cheese, softened
  • 1 cup (200g) granulated sugar
  • 1 tbsp (8g) matcha green tea powder
  • 1 tsp vanilla extract
  • 4 large eggs
  • ¾ cup (180ml) sour cream
  • ¼ cup (60ml) heavy cream
Instructions
  • Preheat oven to 325°F (160°C). Grease a 9-inch (23cm) springform pan.
  • Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan and bake for 10 minutes. Let cool.
  • In a large bowl, beat cream cheese and sugar until smooth. Add matcha and vanilla, mix well.
  • Add eggs one at a time, mixing just until combined. Stir in sour cream and heavy cream.
  • Pour filling over crust. Bake for 50–60 minutes, until center is slightly jiggly.
  • Turn off oven, crack the door, and let cool for 1 hour. Chill at least 4 hours before serving.
  • Dust with matcha or top with whipped cream if desired.
