Peach Jam
This homemade Peach Jam captures the essence of summer in a jar. Made with juicy, ripe peaches and just a few pantry staples, this no-pectin recipe is naturally sweet and gently spiced, letting the fruit shine. Ingredients
- 4 cups (600g) ripe peaches, peeled and finely chopped
- 1¾ cups (350g) granulated sugar
- 2 tbsp (30ml) lemon juice (fresh)
- 1 tsp lemon zest
- ½ tsp ground cinnamon (optional, for warmth)
Instructions
- Peel the peaches: Bring a pot of water to a boil. Score a shallow “X” on the bottom of each peach. Boil peaches for 30 seconds, then transfer to an ice bath. Peel and chop.
- In a heavy-bottomed saucepan, combine chopped peaches, sugar, lemon juice, and lemon zest.
- Bring to a boil over medium-high heat, stirring frequently. Lower heat and simmer gently for 30–35 minutes, stirring often.
- Use a spoon to skim off any foam. If using cinnamon, stir it in during the last 5–10 minutes of cooking.
- Test for doneness by placing a small spoonful on a chilled plate. If it wrinkles when pushed, it’s ready.
- Let the jam cool slightly, then spoon into sterilized jars.
- Store in the refrigerator for up to 3 weeks, or process in a water bath for shelf-stable storage.
