Ingredients
  • 4 cups (600g) fresh strawberries, hulled and halved
  • 1½ cups (300g) granulated sugar
  • 2 tbsp (30ml) lemon juice
  • 1 tsp lemon zest
  • 1 tsp vanilla extract (optional)
Instructions
  • Add strawberries, sugar, lemon juice, and zest to a medium saucepan. Stir to combine.
  • Cook over medium heat, stirring occasionally, until the mixture begins to boil.
  • Simmer gently for 25–30 minutes, stirring often, until thickened.
  • Mash the strawberries lightly during cooking for a smoother texture.
  • Once thick (it should coat a spoon), remove from heat and stir in vanilla (if using).
  • Let cool slightly, then transfer to clean glass jars.
  • Cool completely before sealing. Store in the fridge for up to 3 weeks or freeze for longer.
