Cook – 30 minutes

2½ cups (600 ml)
Ingredients
- 4 cups (600g) fresh strawberries, hulled and halved
- 1½ cups (300g) granulated sugar
- 2 tbsp (30ml) lemon juice
- 1 tsp lemon zest
- 1 tsp vanilla extract (optional)
Instructions
- Add strawberries, sugar, lemon juice, and zest to a medium saucepan. Stir to combine.
- Cook over medium heat, stirring occasionally, until the mixture begins to boil.
- Simmer gently for 25–30 minutes, stirring often, until thickened.
- Mash the strawberries lightly during cooking for a smoother texture.
- Once thick (it should coat a spoon), remove from heat and stir in vanilla (if using).
- Let cool slightly, then transfer to clean glass jars.
- Cool completely before sealing. Store in the fridge for up to 3 weeks or freeze for longer.
Tips & Tricks
- Use fully ripe, aromatic strawberries for the best natural sweetness and color.
- If you’d like a smoother jam, mash the berries more thoroughly or blend briefly before cooking.
- Stir frequently while simmering to avoid scorching and to maintain an even consistency.
- A small splash of lemon juice helps the jam set and brightens the flavor.
- Test the jam by placing a spoonful on a chilled plate — it should wrinkle slightly when nudged with your finger.
- Spread on buttered toast, croissants, scones, or English muffins for a breakfast favorite.
- Swirl into plain or vanilla yogurt for a naturally fruity boost.
- Use as a filling for cakes, thumbprint cookies, or sandwich cookies.
