Tiramisu Cupcakes

Ingredients
For the Cupcakes:
- 1 cup (120g) all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- ½ cup (115g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup (120ml) milk
For the Coffee Soak:
- ½ cup (120ml) strong brewed coffee, cooled
- 1 tbsp coffee liqueur (optional)
For the Mascarpone Frosting:
- 8 oz (225g) mascarpone cheese
- ½ cup (120ml) heavy cream
- ½ cup (60g) powdered sugar
- ½ tsp vanilla extract
- Cocoa powder, for dusting
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
- Whisk flour, baking powder, and salt in a bowl.
- In a separate bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then vanilla. Mix in dry ingredients alternately with milk.
- Spoon batter into liners, filling ¾ full. Bake 18–20 minutes, or until a toothpick comes out clean. Cool completely.
- Brush cooled cupcakes with coffee soak.
- Whip mascarpone, cream, powdered sugar, and vanilla until smooth and fluffy. Pipe onto cupcakes and dust with cocoa powder.
- Refrigerate before serving for best flavor.
